Is it OK to polish the crystal (or is it just called a screen) on a digital watch like Casio G-shock or Timex? Can I just use the stuff they use for plastic watch crystals?

Depends on how deep the scratches are. Yes you can do it. Try tooth paste as a very fine abrasive.
